Located in the trendy new Sawmill Market, XO Waffle is Albuquerque’s first authentic Liège waffle eatery.

At XO Waffle, we craft authentic Belgium Liège Waffles—delicious waffles made from brioche dough infused with imported Belgian pearl sugar. Our dough is prepared in-house to ensure the freshest, most flavorful result.

We then use our top-of-the-line heavy-duty Belgian waffle irons. These irons are CNC machined from a solid piece of cast iron, ensuring even heat distribution for thorough cooking. The high heat melts the pearl sugar, creating a caramelized coating that delivers a delicate crisp on the outside, while maintaining the fluffy texture of our brioche dough on the inside.

Unlike flimsy, thin batter-based waffles, the Liège Waffle is more of a pastry-style treat. The pearl sugar coating not only adds a delightful crunch but also acts as a natural preservative, allowing it to be enjoyed plain, as is traditionally done in Belgium and other European countries.
